Consumer demand for lamb and goat from ethnic communities with a cultural bias for lamb and goat consumption is growing. Some demand is seasonal centered around holidays and other demand is more year round. Ethnic consumers are often looking for different type of lamb or goat than the traditional commodity product. Understanding different ethnicities and demand and meeting this market represents a potential profit opportunity for lamb and goat producers. Host: Ashley Olson, UW-Madison Extension Ag Educator. Speakers: Logan Edenfield, Equity Livestock Cooperative, Lyssa Seefeldt and Amanda Young, UW-Madison Extension Ag Educators

- To understand lamb supply and consumption within the US and impact of imported products
- To understand consumption patterns of different ethnic groups which consume goat or lamb at a higher rate than the general population.
- To demonstrate carcass difference between ethnic lamb and goat and commodity lamb and goat for weight and degree of finish
- To educate producers on tools to assist in identifying ethnic populations with data from the American Community Survey
- To demonstrate to producers how to hit a target marketing date by adjusting breeding and feeding schedules.
